Recipe ~ Grilled Eggplants
In order to get into the Italian state of mind, one has to eat like an Italian!
Love the thrill of the grill? This simple and stately recipe will transform mere eggplant into a delicious meal with the Italian staple ingredients of garlic, basil and EVOO.
~ ~ ~ GRILLED EGGPLANTS ~ ~ ~
3 | Eggplants, thickly sliced
3 | Garlic Cloves, thinly sliced
18 | Basil Leaves
For Drizzling | EVOO
To Taste | Gray Sea Salt
To Taste | Black Pepper, freshly ground
What To Do:
1. Put the eggplant slices in a colander, sprinkle them with salt and let drain for about 30 minutes.
2. Light the barbecue.
3. Rinse the eggplant slices and pat them dry with paper towels. Place the slices on the barbecue and grill them on both sides for a few minutes. Remove the slices from the grill and let cool.
4. Arrange the eggplant slices in layers on a serving dish, sprinkling each layer with garlic, basil leaves, salt and pepper... then drizzling with plenty of EVOO.
5. Set aside in a cool place for at least 1 hour to let the flavors mingle before serving.
