Recipe ~ Jeanie's Crostini

In order to get into the Italian state of mind, one has to eat like an Italian!

Named after my favorite Italian fan and friend here in Texas, this crostini recipe is so simple to make, it almost doesn't warrant a recipe! In Italy, the simple pleasures are life's treasures.

~ ~ ~ JEANIE'S CROSTINI ~ ~ ~

Ingredients:

To Taste | Boscoli's Italian Olive Salad
1 Baguette | Cut into 1/4" - 1/2" thick slices
1 Cup | Freshly Grated Parmesan Cheese (any hard cheese will do, but I prefer Parmigiano-Reggiano)

1. Prepare the bread. You can toast it a bit before you add the toppings.

2. Add a spoonful of olive salad atop each slice of bread. You can spoon it right from the jar! Top with grated cheese.

3. Bake at 350°F for 10-15 minutes, or until just melted to perfection.

These are best enjoyed fresh from the oven, but they also refrigerate well. So easy... it almost doesn't warrant a recipe!
